  • 1 large pot for cooking pasta
  • 1 large skillet
  • 1 tongs

Ingredients
  

  • 2 boneless chicken breast skinless
  • 1 medium yellow squash sliced
  • 1 medium zucchini sliced
  • 1 cup heavy cream
  • 1 large lemon
  • 1 cup parmesan cheese
  • 1 box linguine noodles
  • 2 tbsp olive oil for cooking vegetables and chicken
  • 2 tbsp butter for the sauce
  • 3 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • 2 tbsp parsley chopped

Instructions
 

Cook pasta

  • Bring a large pot of salted water to a boil. Add noodle and cook according to package instructions until al dente. (Reserve 1 cup of pasta water) then drain the pasta.

Prepare the chicken

  • While pasta is cooking, season chicken with salt and pepper. Add olive oil to pan over medium high heat, cook chicken breasts for 5-6 minutes per side. Remove and set aside.

Cook the vegetables

  • In same skillet add the sliced squash and zucchini and sauté for about 5 minutes until tender. Remove and set aside.

Make the sauce

  • In same skillet, melt butter, add garlic and sauté.
    Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until cream begins to thicken.
    Stir in lemon juice, parmesan cheese.
    Cook for another 2-3 minutes, stirring frequently until cheese is melted and sauce is smooth.

Combine everything.

  • Slice the chicken breasts into thin strips, add noodle, squash, zucchini to the sauce and toss. Add reserved pasta water to reach desired consistency.
