This carrot cake is simply put, amazing! So flavorful and moist, it will be a Holiday favorite!

Preheat the oven to 350 degrees° F.Grease and flour two 10 inch round cake pans.

Combine grated carrots and sugar in a medium bowl. Stir in raisins.

Beat eggs until light. Gradually beat in sugar, oil, vanilla extract and pineapple.

Combine flour, cinnamon, baking soda and salt in a separate bowl then stir into egg mixture until absorbed.

Pour into prepared pans.

Bake in oven for 45 minutes.
Cool for about 10 minutes before removing cake from pan.
