This carrot cake is simply put, amazing! So flavorful and moist, it will be a Holiday favorite!

Instructions

  1. Preheat the oven to 350 degrees° F.Grease and flour two 10 inch round cake pans.

  2. Combine grated carrots and sugar in a medium bowl. Stir in raisins.

  3. Beat eggs until light. Gradually beat in sugar, oil, vanilla extract and pineapple.

  4. Combine flour, cinnamon, baking soda and salt in a separate bowl then stir into egg mixture until absorbed.

  5. Pour into prepared pans.

  6. Bake in oven for 45 minutes.

    Cool for about 10 minutes before removing cake from pan.
