Ingredients

  • 2 whole avocados
  • 2 cups oat flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tbsp sugar
  • ¼ cup butter
  • 2 eggs
  • ½ cup applesauce
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350°F and lightly butter your cast iron skillet
  • Add the ripe avocado, eggs, sugar, applesauce and melted butter to a blender and blend until completely smooth and creamy.
  • Pour the blended wet ingredients into a mixing bowl.
  • Add the oat flour, baking powder, and salt, stirring just until a soft cookie dough forms.
  • Gently fold in the chocolate chips until evenly distributed.
  • Gently roll each portion between your palms into a smooth ball. Don’t overwork it, or the cookies can get dense.
  • Bake for 18–22 minutes, until the edges are set and lightly golden and the center is soft but not wet.
  • Remove and let cool before serving.
