  • 2 cups almonds unsalted

Instructions

  • Warm the almonds (optional but helps!). If your almonds are raw, lightly roast them on a baking sheet at 350°F (175°C) for 10–12 minutes. Warm nuts release oils faster, giving a creamier butter.
  • Add almonds to Vitamix. Pour all the almonds into the Vitamix container and secure the lid.
  • Start blending Turn the machine on Variable 1. Gradually increase to Variable 10, then switch to High. Use the tamper to push almonds toward the blade. This process usually takes 2–4 minutes.
  • Scrape and finish. If the mixture sticks, stop and scrape down the sides. Keep blending until smooth. Add a tiny bit of oil only if the almonds aren’t releasing enough natural oil.
  • Once smooth, blend in salt, honey, or any flavorings (like cinnamon or vanilla) for 10–15 seconds.

Notes

Roast your almonds before blending! Lightly roasting almonds (about 10–12 minutes at 350°F) releases their natural oils, making it much easier for your Vitamix to blend them into a smooth, creamy butter without needing added oil.
Always start at a low speed and gradually increase to high, using the tamper to keep things moving.
