Heat the oven to 250℉ and prep your baking pan with coconut oil.

Whisk together the oil, maple syrup, cinnamon and salt.

Add the oats and almonds and stir to coat the oats with oil.

Spread oats onto the baking pan.

Bake for 20 minutes, stirring halfway though.

Remove from the oven and let the granola cool before adding the raisins and chocolate chips.

Store in an airtight container.
Note
TIPS: Wait until the granola is cool to add the chocolate chips and raisins.
The granola is ready when golden brown but will still feel wet and will dry as it cools.

Preheat oven to 350℉. Line the muffin pan with liners.

In a medium bowl, combine flour, cinnamon, nutmeg, salt and baking soda.

Whisk to blend.

In the electric mixer combine eggs, sugar, pumpkin puree and coconut oil.

Add in the dry ingredients until incorporated.

Fill each muffin well with enough batter and place a scoop of cream cheese mixture into the muffin.

Bake for 20-25 minutes.

Transfer to a cooking rack and let cool completely before serving.
Note
Tip: 1. Place the cream cheese lower because it will rise during the baking process.
2. Make sure to get 100% canned pumpkin. Skip the canned pumpkin pie filling as it is already sweetened with spices added to it. It will make the muffins way too sugary.
