These brownie chocolate chip balls are so fudgy, deliciously gooey and lower in sugar content compared to other brownie balls.  

They are a foolproof dessert. Fun activity to do with your little one too!

Using almond flour and I have to say it is one of my favorite options for flour. Almond flour contains more protein and fiber compared to other flours. It also has the same texture as regular wheat flour. Turned out perfect for these brownie bites!

Lower in carbs I did not use sweetener for the brownie itself- the melted chocolate on top was enough sweetness for these.

Fudgy and gooey consistency Using 3 eggs really made this brownie ball fudgy

 

Ingredients:

Almond Flour- Blanched almond flour, not almond meal. We want the fudgy consistency not grittiness that almond meal would produce.

Chocolate Chips- To melt and add to the outer layer – trust me on this!

Cocoa Powder- Unsweetened; be sure to sift it to avoid clumps

Eggs- To help create the fudgy consistency

Coconut Oil- Moistens the brownie ball

Butter- Unsalted, enhances flavor

Sour Cream- Used as a binder to form the ball

Baking Powder- Gives texture

Salt- Enhances the flavor 

  1. Start by mixing your almond flour, baking powder and salt; set it aside. 
  2. Whisk together your eggs, butter, cocoa powder until smooth.
  3. Fold in your dry ingredients and mix until combined.
  4. Put your brownie mix into a coconut oil lined pan for easier removal.
  5. Bake for about 35 minutes at 350F

6. Once cool, mash up your brownies and Mix coconut, sour cream together until it forms balls.

7. Put your chocolate chips and coconut oil in a measuring cup, over water in a pan and melt the chips.

 

8. Dip your brownie balls into the melted chocolate – fun task. 

9. Sprinkle chocolate chips on top and refrigerate for about 1 hour and then dip them again just to create that extra layer for more crunch or enjoy as is!

Some Tips

  • Don’t overcook your brownies, take them out when your fork is clean when testing; they will continue to cook after removing.
  • Place something under your brownie balls so when your dipping chocolate doesn’t get everywhere. 
  • The longer the brownie balls are cooled, the better they are. 
  • I didn’t use any sweetener in the brownies; the chocolate chips were enough.
