If you are looking for the best carrot cake recipe ever, you’ve come to the right place! This carrot infused cake is divine, covered with toasted walnuts, cinnamon, raisins, pineapple and cream cheese icing. It will be a hit at every Holiday get together!

Carrot Cake

Ingredients For The Best Carrot Cake:

  • Carrots (grated): Base of the cake. Tip: Use the larger part of grater
  • All purpose flour: Provides adequate structure for the frosting.
  • Sugar: Sweetener. You can use maple syrup or honey.
  • Cinnamon: Adds flavor.
  • Salt: To bring out the sweetness and provide balance.
  • Vegetable Oil: Adds moisture in.
  • Raisins: Chewy texture, sweetness that complements the warm spices in the cake
  • Pineapple (crushed): Adds moisture and sweetness.
  • Baking soda: To help rise flour.
  • Walnuts: Nutty flavor complements the warm spices of the cake

Instructions To Make The Best Carrot Cake:

  • Step 1: Preheat the oven to 350 degrees° F.
  • Grease and flour two 10 inch round cake pans.
  • Step 2: Combine grated carrots and sugar in a medium bowl. Stir in raisins.
  • Step 3: Beat eggs until light. Gradually beat in sugar, oil, vanilla extract and pineapple.
  • Step 4: Combine flour, cinnamon, baking soda and salt in a separate bowl then stir into egg mixture until absorbed.
  • Step 5: Pour into prepared pans.
  • Step 6: Bake in oven for 45 minutes.

Cool for about 10 minutes before removing cake from pan.

Carrot Cake Frosting

Although you can use whip cream I prefer using cream cheese for the frosting. I skipped using powered sugar like most recipes, and opted for granulated sugar. The grit of the sugar crystals helped fluff up the butter and cream cheese. 

Ingredients:

1/2 cup unsalted butter, softened

1 package cream cheese, softened

1 teaspoon vanilla

1 cup granulated sugar

1/2 teaspoon salt

 

Frosting Instructions:

Mix the cream cheese with a electric mixer. Add in your butter, vanilla, sugar and salt. Mix until smooth. Since opting out of the powdered sugar there’s no need to worry about overbeating which causes your frosting to be runny.
