On a sunny afternoon, my son and I watched an episode of Little Bear (ah, throwback to the 90s!). In this episode Mother Bear made Little Bear’s favorite – a marshmallow mixed berry pie. Inspired by the show, my son, who often imagines himself as Little Bear, begged to make the pie ourselves. With excitement in his eyes, we gathered berries and marshmallows, following Mother Bear’s recipe as closely as we could.
Making this perfect mixed berry pie – his enthusiasm grew, and when we finally pulled the pie out of the oven, we were both so excited! Sitting down to enjoy our berry fruit pie, with the berry-stained smiles and sticky fingers, we enjoyed not just the delicious pie, but the memories we had made together, inspired by our favorite, Little Bear.
Mixed Berry Pie Ingredients
- Butter: Adds richness to overall flavor.
- Marshmallows: Creates gooey and creamy texture. (You can substitute whipped cream.)
- Milk: Creates smooth and creamy texture.
- Heavy Cream: Creates velvety consistency.
- Frozen Mixed Berries: Natural sweetness, tartness and burst of flavor to each bite.
- Pre-Made Graham Cracker Crust: Crunchy base that complements the creamy filling and juicy berries.
Instructions:
- In a pan on low heat, mix butter, milk and marshmallows. Be sure to stir occasionally so that you do not have the marshmallow stick to the pan or burn. Brown your butter beforehand to get another added rich flavor.
2. Once mixed together, let it cool. Put it in the freezer for quicker cooling.
3. Next pour heavy cream in your mixer to create your own whip cream!
4. Add your frozen mixed berries into the whipped heavy cream.
5. Mix your whipped cream berry mixture together with the marshmallows and pour into pie crust.
Then, let it cool in the fridge for a few hours.
Next comes the waiting…the hardest part of the recipe!
Refrigerate for 4-6 hours so the consistency will become firmer.
