Ingredients:

Cauliflower: Hearty and nutritious base for the soup.
Adds a subtle nutty flavor and creamy texture when cooked. 

  • Add shrimp or chicken for more protein.


Coconut Milk: Creates the rich and creamy consistency.

Chicken or Vegetable Stock: Base of the soup, Enhances the overall flavor.


Red Peppers, Radishes, Carrots: Provides essential vitamins and antioxidants, contributing to a wholesome and nutritious dish.

Cilantro and Lime: balances the richness of coconut milk and the earthiness of cauliflower.


Curry Powder: Warm and aromatic spices.


Coconut Oil: Used for sautéing garlic and cauliflower.

Salt and Pepper: Seasoning.

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add garlic.

  2. Add chopped cauliflower to the pot and sauté for a few minutes until slightly browned.

  3. Sprinkle curry powder over the cauliflower, stirring to coat evenly.

  4. Pour in coconut milk and chicken or vegetable stock. Bring to a simmer and let it cook until the cauliflower is tender.

  5. Add diced red peppers, sliced radishes, and diced carrots to the pot. Simmer for an additional 10-15 minutes until the vegetables are cooked to your liking.

  6. Season the soup with salt and pepper to taste. Adjust the curry powder if you desire a stronger flavor.

  7. Stir in freshly chopped cilantro and lime juice. Let it simmer for an additional 5 minutes to allow the flavors to meld.

  8. Once the soup is well-seasoned and the vegetables are tender, remove from heat.

  9. Serve hot, garnished with additional cilantro and lime wedges if desired over rice.
