From the velvety caramel and crunch of toasted coconut to the buttery shortbread and a chocolate center, each ingredient makes the best homemade Samoa Cookie.

Taste:

I’d say we nailed it on the head with these Samoa cookies that taste a lot like the Girl Scout Samoas. Lots of warm toasted caramel flavoring with coconut and chocolate.

Texture:

light, crispy and moist with hints of crispy coconut on the outside and hemp seed for more crunch.

Ingredients:

dates, oats and coconut

Oat Flour (2 cups) – To make the flour, your base of the cookie

Dates (~5 un pitted) – Caramel flavor and are high in fiber and antioxidants

Coconut Flakes (1 cup) – Makes the cookie crisp and adds flavor

Maple Syrup (2 tbsp.) – Sweetener

Hemp Seeds (optional) – Makes them crunchy

Step 1:

Mix the oats in your blender- creating the flour. This brand of oats is the best – Their gluten free and you can incorporate them into a lot of recipes.

Step 2:

Un-pitt the dates- cut the date in half and remove pit. Mash the dates in a bowl with a fork.

Step 3:

Combine the oat flour, mashed dates, coconut flakes and hemp seeds.

Step 4:

Add in your maple syrup or honey. 

Step 5:

Place in the refrigerator for a 2 hours.

Step 6:

Drizzle your melted chocolate on top and enjoy!
