Oatmeal cookies are a classic and comforting treat loved for their chewy texture and wholesome flavor. This easy, low carb oatmeal cookie is perfect for family gatherings or a solo indulgence.
Added this recipe to the Samoa Cookies to create more crunch.
To create your oat flour all you have to do is grind up your oatmeal until it becomes powder.
Combine your egg and melted butter.
Combine Oats and Baking soda.
Mix in your egg and butter.
Roll your cookies into balls.
Place in oven for 12 minutes @ 350F.
Remove from oven and let cool.
You can snack on these or add them to the Samoa Cookies for added crunch!
Can I use instant oats instead of rolled oats?
Yes, expect a slightly different texture compared to rolled oats.
Can I freeze the cookie dough for later use?
Yes, shape the dough into balls and freeze on a tray. Transfer into a air tight container and enjoy later.
Can I make these cookies without eggs?
Yes, try applesauce, mashed banana, keep in mind the texture will be affected slightly.
How can I make the cookies softer?
Try slightly under baking them and ensure not to overmix the dough. Add a bit more moisture like a extra tablespoon of butter.
