Pumpkin Cream Cheese Muffins
We were stuck inside for the morning because it was pouring the rain this past weekend. We figured it was time to get in the fall spirit and I was craving pumpkin! We whipped up these easy creamy Fall inspired muffins in no time.
I saw these muffins in Starbucks and noticed the calories beside the menu which always makes me feel guilty enough not to buy anything from there. I decided it was time to create this recipe from home. They definitely live up to the hype.
The warmth of the cream cheese and pumpkin with all the spices just makes these the best muffins. Super moist, full of spices and flavor you’d expect from a bakery.
Some recipes have a sugar crumb crust but I found these were perfect without the added sugar. I did add the cream cheese a little too close to the top but they were still very delicious!
The cream cheese in the middle mixed with pumpkin is just divine. The recipe is so easy to follow and with just a few steps it makes the time worth it! You can enjoy them cold, warm, for breakfast and of course with a warm beverage.

Pumpkin- Base ingredient
Cream Cheese- Creates richness and creamy texture
Powered Sugar- Sweetener
Nutmeg- Flavor
Cinnamon- Flavor
Salt- Enhances flavor
Baking Soda- Rises the flour
Flour- Base ingredient
Coconut Oil- Creates the moisture in muffin
