Spaghetti squash is a nutritious winter vegetable known for its stringy noodle like flesh when cooked. It offers a lot of fiber, beta-carotene, folate and more.

This vegetable spaghetti is a great substitute for pasta and you can add a variety of flavors to make it a family favorite!

How to cook Spaghetti Squash:

There are many different cooking methods such as microwaving, steaming in a pan of water or sliced into rings and baked. However I have found this method the easiest and here’s why.

Cut the squash in half, rub olive oil inside and roast it cut side down on a baking sheet. This method reduces the amount of moisture and yields golden, caramelized edges that add extra flavor.

You will need a very sharp knife in order to cut the squash. Getting this knife sharpener is a kitchen essential.

Are there specific seasons or ingredients that pair well with noodle squash? It pairs well with fall flavors like sage, roasted mushrooms, fresh thyme, lemon zest and parmesan cheese or incorporate into summer salads with fresh herbs and vegetables. 

Instructions for spaghetti squash:

  1. Preheat oven to 400 degrees F
  2. Use a very sharp knife to cut off the tip-top and very bottom ends of the squash.
  3. Stand the squash upright and carefully slice through it from top to bottom.
  4. Drizzle olive oil and rub it all over the inside of the squash. Sprinkle Salt and pepper inside and then place them cut-side down on the baking sheet.

  5. Bake for 60 minutes or until the cut sides are turning golden and inside is easily pierced through with a fork.
