Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 ¾ cups milk
  • ½ cup butter melted
  • 1 tsp vanilla extract
  • 1 cup frozen blueberries do not thaw
  • ½ cup pecans chopped
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup

Instructions
 

  • Preheat your waffle iron.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, beat the eggs and then add the milk, oil (or melted butter), and vanilla extract. Mix until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.
  • Gently fold in the frozen blueberries, chopped pecans, and chia seeds until evenly distributed throughout the batter.
  • Lightly oil the waffle iron with butter or a light brush of oil.
  • Pour the batter into the preheated waffle iron, using a ladle or measuring cup, and spread it out evenly. Be sure not to overfill.
