    RV Camping Lunch Ideas

When it comes to planning RV camping lunch ideas, the key is to keep things simple while still enjoying tasty food on the road.

One of my go-to meals is a make-ahead tuna salad recipe—with just a few fresh ingredients like diced bell pepper, a little olive oil, and a pinch of salt and pepper, it comes together in minutes and can be stored in a mason jar for quick lunches during your camping trip.

Unlike heavier camping meals that require a cast iron skillet or long cooking times, this easy option is light, refreshing, and doesn’t take up much space in your RV fridge.

Pair it with crackers, fresh veggies, or even spread it on bread with a little cream cheese for a variety of easy camping meals that make your trip stress-free and delicious.

    Almond Butter

    ALMOND

    Creamy Vitamix Almond Butter

Creamy vitamix almond butter is so easy, delicious and quick to make. Spread onto bread, mix in with oats, yogurt or use it to make nutty flavored sauces!
    Prep Time 10 minutes
    Total Time 10 minutes
    Servings: 6 people
    Course: Breakfast, Dessert
    Cuisine: American
    Calories: 90

    Ingredients

    • 2 cups almonds unsalted

    Equipment

    • 1 Vitamix

    Method

    1. Warm the almonds (optional but helps!). If your almonds are raw, lightly roast them on a baking sheet at 350°F (175°C) for 10–12 minutes. Warm nuts release oils faster, giving a creamier butter.
    2. Add almonds to Vitamix. Pour all the almonds into the Vitamix container and secure the lid.
    3. Start blending Turn the machine on Variable 1. Gradually increase to Variable 10, then switch to High. Use the tamper to push almonds toward the blade. This process usually takes 2–4 minutes.
    4. Scrape and finish. If the mixture sticks, stop and scrape down the sides. Keep blending until smooth. Add a tiny bit of oil only if the almonds aren’t releasing enough natural oil.
    5. Once smooth, blend in salt, honey, or any flavorings (like cinnamon or vanilla) for 10–15 seconds.

    Notes

Roast your almonds before blending! Lightly roasting almonds (about 10–12 minutes at 350°F) releases their natural oils, making it much easier for your Vitamix to blend them into a smooth, creamy butter without needing added oil.
Always start at a low speed and gradually increase to high, using the tamper to keep things moving.
