Ingredients:

  • Butter (Browned)- Creates a rich and nutty flavor.
  • Granulated Sugar- Sweetener, aids in spreading during the baking process and crispiness.
  • Brown Sugar- Adds moisture, chewiness and has a subtle molasses flavor.
  • Eggs- Acts as a binder and structure to the cookie.
  • Vanilla Extract- Enhances overall flavor.
  • Almond Flour- Makes cookies tender and moist.
  • Old Fashioned Oats (optional)- Creates a chewy, hearty texture.
  • Baking Soda- Helps with the rise.
  • Baking Powder- Helps activate the baking soda, making cookies softer and tender.
  • Salt- Enhances flavor by balancing sweetness and cutting through richness.
  • Chocolate Chips- Star ingredient! Choose high quality chocolate for the best taste.
  • Beef Gelatin- Adds tenderness and chewiness.

Using granulated sugar (lower moisture), butter and baking longer and slower produces light, crunchy cookies. 

What makes cookies flatten?

Oven temperatures are very important- if using too much heat, the fats in the dough begin to melt before the other ingredients can bake together to form the cookie.

Opt for almond flour or coconut flour for a low carb alternative to regular flour. Substitute sugar with honey, stevia and use sugar free chocolate chips.

Instructions:

  1. Preheat your oven to 350°F
  2. In a saucepan, melt your butter over medium heat until it turns golden brown. -See my brown butter recipe here. 

3. In a large mixing bowl, combine the brown sugar, brown butter and vanilla extract. Mix well.

4. Mix in the eggs (one at a time, to create a smooth base) add in dissolved beef gelatin.

5. In a separate bowl, whisk together the oats, flour, baking soda, baking powder and salt.

6. Gradually add the dry ingredients to the wet ingredients. Avoid overmixing to maintain a tender texture.

7. Stir in chocolate chips.

8. Place cookie dough in refrigerator for about 1-2 hours- to marry the ingredients together.

9. Drop rounded tablespoons of cookie dough onto ungreased baking sheets.

10. Bake for 9-11 minutes.

11. Remove from oven and allow cookies to cool on wire racks.

Tips: To avoid overmixing, mix until ingredients are just combined.
