Why are your cookies crunchy?
Using granulated sugar (lower moisture), butter and baking longer and slower produces light, crunchy cookies.
What makes cookies flatten?
Oven temperatures are very important- if using too much heat, the fats in the dough begin to melt before the other ingredients can bake together to form the cookie.

Opt for almond flour or coconut flour for a low carb alternative to regular flour. Substitute sugar with honey, stevia and use sugar free chocolate chips.
Incorporate butter or coconut oil for healthy fats and add vanilla extract for flavor.
3. In a large mixing bowl, combine the brown sugar, brown butter and vanilla extract. Mix well.
4. Mix in the eggs (one at a time, to create a smooth base) add in dissolved beef gelatin.
5. In a separate bowl, whisk together the oats, flour, baking soda, baking powder and salt.
6. Gradually add the dry ingredients to the wet ingredients. Avoid overmixing to maintain a tender texture.
7. Stir in chocolate chips.
8. Place cookie dough in refrigerator for about 1-2 hours- to marry the ingredients together.
9. Drop rounded tablespoons of cookie dough onto ungreased baking sheets.
10. Bake for 9-11 minutes.
11. Remove from oven and allow cookies to cool on wire racks.
Tips: To avoid overmixing, mix until ingredients are just combined.
